IngredientsMakes: 1 (25cm) square cake

  • 1kg dried mixed fruit
  • 2 bags black tea, for soaking
  • 3 teaspoons mixed spice
  • 1 teaspoon ground cinamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 250ml mixed alcohol (I use cherry brandy, brandy and marsala)
  • 200g treacle
  • 250g plain flour
  • 250g butter
  • 250g dark brown muscovado sugar
  • 4 eggs, beaten
  • 1 teaspoon baking powder
  • 100g glace cherries
  • 100g dried chopped apricots
  • 75g mixed peel
  • lemon and orange zest

    One week before baking:

  1. The week before you intend making the cake, soak the dried mixed fruit in hot black tea. I normally use two teabags and enough water to cover the fruit. Leave overnight to soak. This plumps up the fruit. Then drain thoroughly. Put the fruit back into a container that you have a lid for.
  2. In a small saucepan combine the spices, alcohol and treacle. Bring to the boil and stir so that the treacle is dissolved. Pour this mixture over the soaked dried mixed fruit, stir thoroughly to ensure all fruit is coated, put the lid on and put in the fridge. Leave this for a few days. It can be left for up to a fortnight (I use a large locknlock container). Every day turn the container upside down so that all the fruit gets a good soaking with the alcohol.
  3. Drain the residual alcohol from the fruit over a bowl. Save it for later.
  4. Bake the cake:

  5. When you're ready to bake the cake, prepare your tin by lining with greaseproof paper, ensuring the greaseproof is taller than the tin. My tin is a deep square approximately 25x25cm (10x10 in). If you like you can also wrap newspaper around the sides of the tin. This stops the outside of the cake from burning as it cooks.
  6. Sieve a bit of the flour over the fruit and mix. This stops the fruit from sinking to the bottom of the cake.
  7. Cream the butter and sugar together until light and fluffy. Slowly add the beaten eggs, flour and baking powder alternately to stop the cake mixture from curdling.
  8. Fold in the mixed fruit and then the cherries, apricots, mixed peel and lemon and orange zest. Ensure there are no pockets of flour.
  9. Put the mixture into the prepared baking tin. When smoothing the mixture in the tin ensure it goes into all corners and create a slight dip in the centre of it so that as it rises it stays a similar size overall.
  10. Place in the centre of a preheated oven at 140 C / Gas 1-2. Keep an eye on the cake as all ovens cook slightly differently but it should take around 2 1/2 hours to cook. Put a kebab stick in the centre, and it should come out clean if it is cooked. Leave to cool. Once cool, wrap and store in an airtight tin.
  11. You can leave the cake as it is or a couple of times up to Christmas you can feed it by adding extra alcohol over the top by poking small holes with a kebab stick all over and gently spooning a little alcohol over the top.

To decorate

Decorate however you wish. I glaze the top apricot jam, roll out marzipan over the top. Then I mix a little golden syrup into about 400g of glace cherries, whole almonds and walnuts. Then I spread out this mixture over the marzipan and press down. Toast under a grill for a few minutes until golden. Leave to cool.

1/2 c Currants
1/2 c Blackstrap molasses
1/2 c Pure apple juice
12 Egg yolks
12 Egg whites

Mix fruit with 2 cups flour mixture. Heat oven to 275 degrees. line with
wax paper and grease 6 loaf pans 8″ x 4 1/2″ X 2 1/2″ deep. Beat butter and
brown sugar until fluffy. Mix in egg yolks. Then mix in alternately just
until smooth remaining flour mixture, juice and molasses. Turn into a large
container and stir in fruit mix by hand. beat egg whites until soft peaks
are formed and fold in to mixture.

Bake for approximately 2 hours. yields 6 loaves Wrap well in foil. Can add
brandy or rum at intervals.

Decorations: Pineapple rings, maraschino cherries,pecans and or walnut
halves marzipan, etc….

Spiced Holiday Cutouts

This is the last day of #ChristmasCookies Week and I'm sharing one last find from my Gram's recipe box. I always hesitate when it comes to rolled out cookies, but the combination of the spices in these just seemed so perfect for the holidays I decided to give them a try. I highly recommend grating the spices fresh if you can. I have a handheld twist grater that's awesome for this.

While the dough was in the fridge chilling I searched through all of my fun cookie cutters. At the bottom of the box was the nested set of stars. When my son was small we used them to make 3D Christmas Trees.

I cut out 2 each of the 6 sizes. Then I chose took the second smallest and used it for the remainder of the dough. They don't spread, but be sure not to crowd the sheets or they won't bake evenly. Once they cooled I used my favorite Powdered Sugar Glaze on all but 10 of the smaller stars. You can tint it green if you like, but I wanted it to look like snow so I didn't.

I got two wonderful sprinkle mixes from Sweets and Treats, Lumber Jack and Mean One. Either would have worked with the tree theme, but in the end I had to go with Mean One, which is inspired by one of my all time favorite holiday movies.


For the tree stars, I piped icing just around the edges and then added on the sprinkles. After it was set, I stacked them from largest to smallest, and added the smaller stars in between the larger ones to give it more height. I tipped the last one up and piped some icing behind it to keep it in place.

Spiced Holiday Cutouts

Ingredients

  • 2 sticks butter, softened
  • 1 cup light brown sugar
  • 2 eggs
  • 2 1/2 cups flour, sifted
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cloves
  • 2 tablespoons raw sugar OR Decorator icing, sprinkles, etc

Instructions

  1. Beat together butter and sugar until light and fluffy. Add eggs, mixing well. Add in flour and spices until combined. Dough will be soft. Wrap well and refrigerator for 1 to 2 hours.
  2. Heat oven to 350º. Line baking sheets with parchment paper.
  3. Split dough in half. Roll out to about 1/4" thick on a lightly floured surface. Cut into shapes as desired. You can gather the scraps and reroll them gently. Repeat with remaining dough.
  4. Place cookies onto prepared sheets. Sprinkle the tops with raw sugar or leave plain if you plan on icing them.
  5. Bake for 10 to 12 minutes. Let cool on sheets 1 to 2 minutes, then remove to wire rack to cool completely.
  6. If desired, frost cookies and decorate with sprinkles, candies, etc. Store in an airtight container.

Kathryn&rsquos Bridal Shower

It’s always a good day when these girls are involved.

And now, after today, we’ve got another bridal shower successfully in the books! We (the bridal party) all arrived a bit early to set things up at the restaurant which, oddly enough, I realized I’d been to before because it was the same place that our friend Joelle had her rehearsal dinner. Small world!

In lieu of favors, the bridal party decided to make a donation on behalf of each guest to Susan G. Komen for the Cure.

This was something that is very near and dear to Kathryn and her family, and we all knew that it would be a great fit.

Kathryn, just being Kathryn and the planner that she is, also arrived early before most of the guests did. She was a little anxious about the day, so we made sure to get her a little beverage to ease into things…

But you’d honestly never know she was feeling nervous because everything was great.

For lunch, we had a buffet of sandwiches, salad, veggies, soup, and fresh fruit.

I dabbled in a bit of everything, which was all fresh and yummy.

Shortly after lunch, Kathryn got started on opening her gifts and I’ve got to say that I think my favorite gift that she received was this basket she’s holding here.

It was an “ice cream sundae” theme basket, complete with bowls, a scooper, and all sorts of toppings. Now that sort of gift is seriously right up my alley!

We also played a “how well do you know Paul?” game with her, which was rather amusing at times, if you couldn’t tell.

Almost as amusing as this gorgeous ribbon hat that we put together for her.

Did anyone else ever actually use this at their wedding rehearsal? I’m pretty sure I never brought mine to my wedding rehearsal, and most of the other girls who were there today said the same thing. Now I’m curious…

Ice cream cake, that is. I ate around as much of the chocolate ice cream as I could (crazy as it sounds, I can’t stand chocolate ice cream), but the big chunks of Oreos and thick layer of fudge underneath that vanilla top were ALL mine.

Ohh, that thing was good. REAL good.

Overall, another great day with these lovely ladies. And before we know it, it’ll be wedding time…

…but first we’ve got a couple fun bachelorette parties to thrown in there in the next few weeks! Oh gosh, I just love my friends’ weddings.


Kathryn’s Poppy Seed Cake

Back in the day, if you went to my grandmother’s house for any reason … expected or unexpected, you would be offered food. My grandmother s wasn’t the softest spoken lady, and she always spoke her mind, but she was also the epitome of hospitality. There were always chocolate chip cookies in the cookie jar, and a pound cake in the fridge. If it was anywhere near mealtime, there was something more substantial coming your way!

I really wish I was as prepared as my grandmother. I would love it if I always had something to offer visitors who just pop over for a quick hello (I also really wish my house was presentable for people who stop by unexpectedly!). What’s worse, people hardly ever drop by, so since I’m usually expecting the people who show up, how rude is it that I don’t have anything to offer them?

Last week I was making dinner for a friend, and I thought I would make a couple of poppy seed cakes, one for my friend, and one for the house … just in case. I sent the one cake home with my friend, then I cut a slice for me, and a few for the kids. I still had half a cake left, so I thought I was set. Not so much…

Here is a little piece of advice I will share for people you have young and always hungry kids: hide the cake! Saturday morning found a very resourceful 18 month old, a stool, and the remains of half a poppy seed cake on the floor! At least I had one piece. (As I type, that same 18 month old is walking around with a Pop Tart. Note to self: lock the pantry!)

This poppy seed cake comes from my cousin Kathryn. It’s something that I make all the time. It requires about the same amount of effort as a batch of muffins, but it seems a little fancier. I feel like if I had a serving tray and some raspberry cordial, it would be a scene right out of Anne of Green Gables! … as long as I hide it from the children!


How to make Cranberry Breakfast Cake

First, gather all your ingredients, as usual. This ensures you have everything you will need.

Add the streusel topping ingredients to a mixer bowl.

I use the stand mixer to make the streusel.

You could also cut the butter in with a pastry blender, or a simple fork, so do it whichever way you like. I most often do it with a mixer.

Mix the almonds into the streusel and set it aside in a little bowl.

Make the cake in the same mixer bowl (don’t wash it!) by stirring the cranberries and almonds into the dry ingredients.

Stir to coat them.

Then mix in the wet ingredients.

Batter will be verrry thick!

Sprinkle streusel on top.

Cranberry Breakfast Cake is ready for the oven.

This makes a great dessert, too, with a scoop of vanilla ice cream, or some lightly sweetened whipped cream.

Let’s go! Carpe diem and whip this baby up. You want this Cranberry Breakfast Cake to be ready for tomorrow’s breakfast, right?


Basic Lentil Dip

(From someone we met at a recent winter party)

  • 1 cup red lentils (remember that lentils do not need to be presoaked, unlike, say dried kidney beans)
  • 4 cups water and/or beef stock
  • 1 tsp jaffna curry
  • 1 tsp salt
  • Place all the ingredients in a large stock pot and boil (simmer gently) until the whole concoction attains a puree-able consistency.

Line a colander with at least two layers of cheesecloth and add anywhere from 1-3 cups of yogurt (n.b. NOT fat free yogurt as it will drain completely through - stick to using regular yogurt)

Fold over the cheesecloth and weigh the mass down (with a plate, for example) to "force" (read: gently encourage) the whey from the yogurt to drain. Place the colander (with a plate underneath to catch any whey) in the refrigerator and let it sit overnight. In the morning, you will have yogurt cheese.
