In case you couldn&rsquot tell by all the free range children running around and the sweltering heat, it&rsquos summertime! For me, that means something very important &ndash it&rsquos time to make Pineapple Fried Rice to pretend we&rsquore in the tropics and also grilling season!

The pineapple fried rice served with this grilled chipotle chicken is a sweet and savory fried rice dish that hits the spot every time, all while tasting like juicy pineapple. Really, this stuff is heavenly!

Just when I thought that pineapple fried rice couldn&rsquot get any better, I realized just how wrong I was. That fresh, flavorful, summery fried rice is really elevated when served with grilled chipotle chicken! The rich flavors of the chicken come from ingredients like honey, chipotle pepper sauce, and smoked paprika. Paired with the sweet fried rice, it&rsquos unforgettably good.

I feel like too often, when people think of seasonal foods, their minds go to cozy fall and winter dishes. While those are fabulous, it&rsquos time to show summer some love, and this is the perfect dish to do it with!

The pineapple rice by itself practically takes you to the tropics, while the savory chicken really hits the spot. After a long hot day in the blistering heat, treat yourself to this easy dinner!

This recipe is great on its own or cut the breasts into strips for other uses. I usually make a large batch and freeze the strips. The chicken is great in any recipe calling for cooked chicken. Chicken fahitas, pasta sauces or salads are my family's favourites.

I also freeze the marinated chicken in the ziploc bag. I buy in volume when on sale even if I don't have the time to cook it right away. Best Grilled Chicken Breast

Grilled chicken breasts can be the epitome of boring. Too often they're dried out or rubbery. But when soaked in a super-quick marinade &mdash with balsamic, brown sugar, and dried thyme &mdash you're guaranteed deliciousness. Not to mention, grilling the breasts will lock in all those amazing flavors while providing some serious char.

How long can I keep the chicken in the marinade?

We'd recommend no longer than 24 hours! Technically (according to the USDA) you can keep raw chicken refrigerated for up to 2 days, but we don't recommend marinating that long.

How do I keep the chicken from sticking on the grill?

As long as you give each side enough time, it shouldn't! When your chicken gets those nice charred lines, it naturally releases from your grill grates. If you try to flip and the chicken feels stuck, try giving it another minute or two! It'll release naturally, when it's ready.

What should the internal temperature of my chicken be?

According to the FDA, all chicken should be cooked to an internal temperature of 165°. We prefer our chicken breasts closer to 150° because we're rule breakers. 😉Jokes aside, the real reason we don't go all the way to 165° is because boneless skinless chicken breasts have basically no fat, so in order to maintain some juiciness we pull them a little early.

Can I adapt the marinade?

Absolutely! Swap in a different acid for balsamic like champagne vinegar or lemon juice. Try different dried or fresh herbs like cilantro or oregano. You could even sub out the brown sugar for honey or agave! We love the marinade on our cilantro-lime chicken, which you can sub in entirely for this one! Also feel free to add in your favorite spices or even hot sauce. Boneless, skinless chicken breasts are the perfect blank canvas to experiment with your favorite flavors.

How hot should my grill be for chicken breasts?

Depending on the size of your chicken breasts, a two-zone (that means two temperature) fire is the way to go. If you have really small chicken breasts, you can get away with a medium-high heat, because by the time you have nice grill marks on both sides the chicken will be cooked through as well. For larger chicken breasts, get your sear marks on both sides over high heat, then move them to a medium-low heat to finish cooking.

What should I serve with this?

Trim chicken breasts by removing any trim-able fat and excess skin and the rib section. Cut in half or thirds depending on size. Pat dry.

Mix ingredients of rub very well.

Apply rub to skin heavy and lightly to cut edges. Shake off excess. Don't try to use all the rub.

Preheat grill to a surface temperature of about 450 ° , which is medium-high on most grills. Keep one of the outside burners off to create a cooler area. You want the chicken to rest at room temperature for 15-20 minutes before starting to grill.

Place the chicken pieces skin side up and grill for 5-6 minutes. Flip skin down for 3-4 minutes. Keep doing flips, and when the skin is down, only do 3-4 minutes. If the skin is getting too dark, do the skin-side-down time over the turned-off burner.

Grill to an internal temperature of 165 ° . About 30 minutes total grill time depending on your grill and sizes of chicken pieces.

Spicy Stuffed Grilled Chicken Breasts Recipe

These spicy stuffed grilled chicken breasts are the perfect summer meal! So delicious and flavorful, and so easy to make on the grill!

Grilling is definitely one of my favorite things about summer! When it&rsquos too hot outside, I don&rsquot want to heat up the kitchen by turning on the stove or the oven, so cooking on the grill is the way to go. These spicy stuffed grilled chicken breasts are a new favorite dinner at our house! They are so savory and flavorful, with a delicious filling made of cheese and peppers. They&rsquore also quick and easy to make, and made with just a few ingredients.

I wanted my chicken to be extra flavorful and tender, so I marinated it quickly in some Kraft Zesty Italian dressing. I then mixed together some Philadelphia cream cheese, Kraft pepper jack cheese, green chilies, and jalapeños to make a delicious spicy filling. If you want the filling to be milder, you could use mild jalapeños and mild green chilies. Then comes the fun part &ndash stuffing the cheese into the chicken!

From there, you&rsquoll grill the chicken for about 8-10 minutes per side, or until cooked through. I served mine with some fresh diced tomatoes and jalapeños on top, which made for a festive and fun presentation. Seriously, don&rsquot they look delicious?

The best part, of course, is that spicy and cheesy filling. Yum! I am so looking forward to a summer full of grilling.


Grilled Chicken Pita Sandwich

You can grill or fry marinated chicken breast for this sandwich. Slice the chicken breast and combine with diced tomato, onion, and cucumber. Stuff warm pita bread with the chicken and vegetables, along with your favorite tahini, falafel, or tarator sauce.


Indian Spiced Grilled Chicken

Let’s be real: boneless, skinless chicken breasts can get boring when eaten night after night. Since they are naturally lean, they have a tendency to dry out quickly if not prepared properly.

To ensure a juicy, tender chicken breast, I love creating quick and easy yogurt marinades. Acting as a natural tenderizer, the acidity in yogurt is my secret weapon to perfect chicken every time.

Similar to lemon juice, it helps break down the proteins in the meat which results in a moist and flavorful end product.

We always have plain yogurt on hand for smoothies, tzatziki, cucumber raita and more so I love using it to throw together a quick marinade. Speaking of raita, this Indian Spiced Grilled Chicken is best served with a cool and creamy yogurt sauce on the side. In fact, I love whipping up the raita while the chicken is marinating.

If you don’t love Indian flavors, feel free to use any of your favorite spices. This would be ideal for my All Purpose Lebanese Spice Blend or you could head to Mexico and add smoked paprika, cumin, and lime juice.
