Who can resist a trio of melted cheeses nestled among soft, chewy noodles? Not many people. Try this simple recipe and taste the difference.

Ingredients

  • 1/4 Teaspoon salt, plus more for cooking the pasta
  • One 16-ounce package elbow macaroni
  • 1/2 Cup shredded Muenster
  • 1 Cup shredded sharp Cheddar
  • 1/2 Cup shredded Monterey Jack
  • 1/2 Cup unsalted butter, melted
  • 1 1/2 Cup half-and-half
  • 8 Ounces cubed processed cheese food
  • 2 eggs, beaten
  • 1/8 Teaspoon ground black pepper

Heat a medium, deep skillet over medium heat. Add oil and butter, about one turn of the pan. When the butter melts into the oil, add flour and combine. Gently cook, whisking flour and butter together, until smooth and flour has had a chance to cook, about three minutes.

Slowly add milk while continuing to whisk. Gently bring milk to a bubble while stirring frequently. Allow the milk to thicken a bit, then stir in two cups of shredded cheddar cheese a handful at a time.

Season sauce with nutmeg and cayenne pepper. Taste and add a little salt, if you like. Add cooked pasta to sauce and coat completely by turning over and over in the cheese sauce.

Transfer to a baking dish and top with remaining cheese. Place baking dish under a hot broiler and brown the cheddar cheese on top.

Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente drain.

Meanwhile, melt the butter in a large saucepan over medium heat. Stir in the onion, and cook for 3 minutes until it begins to soften. Add the garlic, and continue cooking until the onion has softened and turned translucent, about 2 minutes more. Slowly stir in the flour, and cook, stirring constantly for 5 minutes.

Stir in the half-and-half and milk, and bring to a simmer. Reduce heat to medium-low and stir in mustard powder and liquid smoke simmer for 10 minutes, stirring occasionally. Add 1 cup of Parmesan cheese, along with the cream cheese, Swiss, Monterey Jack, and Cheddar cheeses stir until melted. Season to taste with salt and pepper, then stir in the drained macaroni noodles. Pour into the prepared baking dish. Sprinkle the remaining 1/2 cup of Parmesan cheese and breadcrumbs over the macaroni

Bake in preheated oven until bubbly and brown, about 30 minutes. Remove from the oven and allow to stand 5 to 10 minutes before serving.

This is a great recipe only problem had was with the amount of milk this recipe said to use. This is way to much. I found adding Cayenne pepper adds a real nice flavor to the dish.

I love mac n cheese and this was my first time making it so I followed the recipe exactly. I found this recipe a little bland. I would recommend using less milk and more cheese. Throw a little fontina cheese in there too and maybe sharp cheddar instead of cheddar.

This dish is my oven now. from the first time I read this recipe, pouring it in the baking dish & watching it bake, I think 6 cups of milk is way too much. I think Mac'n Cheese made right will always be considered high calorie & unhealthy if eaten too much, unless made with Cauliflower & low cal cheese. But what's the fun in that! Remember everything in moderation. I was just looking for meatless dish to make during lent. I also had a 1/2 cup of Feta in my refrigerator, that I added to the recipe. Preheat oven to 350 degree Fahrenheit.

Layer the dry pasta shells in a single layer in a large sized baking pan or tray (9*13 pan is good).

Also add the ingredients water, milk, garlic powder, onion powder and enough salt, stir in evenly.

Also place the stick of butter on top.

Place the baking tray in the oven, set the timer for one hour to bake the mac and cheese.

In about few minutes (about 15 to 20 minutes), the butter will melt and so carefully open the oven and stir in the melted butter with the rest of the ingredients in the pan.

The contents will be really hot at this time and also there is a chance of spilling hot liquid from the pan if you move it too much, so be careful while doing so. To avoid this step, you may add melted butter early in the process and mix in.

Once the butter is stirred in, close the oven and bake for the rest of the time until the top begins to lightly brown and the inside is cooked.

Check the contents in between (after about 50 minutes of time), since the oven temperatures can vary and in some cases the dish may get cooked early.

Once the pasta is baked (we baked it for about an hour) and the top starts to lightly brown, carefully open the pan and add 4 cups of shredded cheese and mix in with the cooked pasta. The pasta shells may seem to stuck together as they are baked, but you can use a spoon to mix the cheese within the baked pasta carefully. Make sure to mix the cheese evenly with the pasta.

Layer the remaining one cup of shredded cheese to the top of the pasta evenly. If you wish, you may add slightly more amount of cheese on top.

To get the most delicious cheesy baked mac and cheese which is lightly golden brown in color, increase the oven temperature to 400 degree Fahrenheit and bake for another 7 to 10 minutes or until the cheese is melted and the cheese on top is also completely melted and lightly browned on top!

This last step of increasing the oven temperature to do the final baking is very important, as it helps to bake the perfect mac and cheese that is delicious and golden brown when baked.

Enjoy the baked mac and cheese while it is still slightly hot or warm for the best results. If serving later, you may reheat it in the oven as you usually do.


Easy, Homemade Macaroni and Cheese

As much as I’m a fan of the southern baked style of macaroni and cheese, I’m equally devoted to the creamy, cheesy stove top version.

Matter of fact, I’m pretty sure I like mac n cheese in whatever form is chooses to come in. Sadly, even the deep fried version.

For a while Isaac would only eat the blue box kind. Well hello there childhood! It’s my fault though. As with most kids it was the first mac n cheese he’d ever eaten and therefore NOTHING could rival it.

Can’t blame him too much because gosh I use to love that stuff. Now I can’t handle the taste of the cheese powder. Guess I’m getting old.

I let him make macaroni and cheese for dinner a few years ago and he’s never asked for the blue box version again. Seriously. It’s like he just forgot all about it once he learned how to make his own. Wish everything was that easy.

I’d like to think it’s because this creamy, stove top macaroni and cheese is just as good as the boxed stuff in the store. And it’s a double win because it doesn’t contain all the artificial yellow powdery stuff and other chemicals.

Customize it with your favorite cheeses and you’ll be in heaven! When I make this for myself I ALWAYS go with a blend of smoked cheeses. SOOOO good but for the boys we stick to sharp cheddar and mild white cheddar or Monterey jack.

I love that this macaroni and cheese can all be thrown in one skillet and cooks up super quick. It also doesn’t contain eggs like many homemade stove top mac n cheese recipes.

Mac and Cheese with Mozzarella and Parmesan

Instructions

Cook the pasta and drain the water through a colander.

Chop the garlic and brown in butter over medium heat for 1–2 minutes. Mix with flour, cream, salt, pepper and other seasonings.

Wait until the mixture is homogeneous, then add the grated cheese and mix until it begins to melt. Make sure that the pan does not heat up too much.

Add macaroni, chopped peppers, spinach leaves and sliced mushrooms to the pan. After 6 minutes, you may remove it from the stove.

Macaroni with Cheese and Avocado

Dice 2 avocados. Set aside a few slices, mash the rest with 2 teaspoons of lemon juice. Melt 1.8 oz (50 g) of butter in a saucepan. Add 2.1 oz (60 g) of flour and simmer until golden brown, about 2-3 minutes.

Pour into saucepan 17 us fl oz (500 ml) of milk, salt, pepper and mix well. Boil for 4-6 minutes until the sauce begins to thicken. Remove the dish from the stove, add avocado with lemon and grated cheese. Mix it to make the mass homogeneous.

Pour pasta over sauce. Garnish with avocado cubes on top.

Macaroni with Cheese, Beer, and Bacon

  • 3 tablespoons of butter
  • 3 tablespoons of flour
  • 8.1 us fl oz or 240 ml of beer
  • 8.1 us fl oz (240 ml) of milk
  • 6.3 oz (180 g) cheddar
  • ½ teaspoon of salt
  • 1 pinch of ground black pepper
  • 15.9 oz (450 g) of cooked pasta

  • 5.3 oz or 150 g of breadcrumbs
  • 2 tablespoons of olive oil
  • 1 tablespoon chopped green onions

Instructions

Heat butter in a frying pan and fry flour in it for about a minute. While stirring constantly, slowly pour in beer and milk. Leave it on the stove for another 3-4 minutes to thicken the mixture.

Add cheese, finely chopped fried bacon, season with salt and pepper.

Put the pasta in the baking dish and pour the sauce over it. Top with a mixture of crackers and olive oil.

Bake in the oven for 25-30 minutes at a temperature of 374 °F (190 ° C). Cool for 10 minutes and sprinkle with onion before serving.

This kid-friendly baked mac and cheese recipe is easy to make and a tasty alternative to processed boxed macaroni and cheese. Even picky kids love it!

Mac and cheese is a favorite food in our household, but I try to avoid the boxed kind. All those artificial ingredients&hellipyou know what I mean. I&rsquom okay with it once in a while, but not often.

Of course, the kids love the boxed stuff and haven&rsquot been fans of the much better homemade baked mac n cheese. Believe me, I&rsquove tried a lot of different recipes. There are many good recipes out there &ndash that I like, but are they kid-friendly? That was the question.

And then I found this recipe for Homemade Macaroni and Cheese in one of my cookbooks.

I&rsquove adapted it slightly and this is the result: Kid-Friendly Baked Mac and Cheese.! My kids loved it they ate it up and asked for more. Now I&rsquod be lying if I said they&rsquod pick this over the boxed stuff (I swear they put addictive stuff in the boxed version), but I&rsquom happy I found a homemade recipe that works for my whole family.

And since you can use whatever type of cheese you like (mix and match, make it different each time &ndash it&rsquos up to you) in this simple macaroni and cheese, it&rsquos versatile too, another plus in my book.

My kids call this the best mac and cheese recipe ever and I have to agree.
