This dish is made before being served. But first, if you have frozen fish fillets, they must be allowed to thaw at room temperature, squeeze the water left with an absorbent paper towel and season with salt and pepper.

Put a little olive oil in a pan with a lid; sauté onions, julienned peppers, chopped chilli and diced tomatoes; season with salt, pepper and add a little more coconut oil. Then sprinkle with 1 teaspoon of saffron (cucurma).

Place the fish fillets - leave for 2-3 minutes on each side - then add the coconut milk.

Taste the spices and leave until the liquid drops a little. I added a little more fish soup to make a more liquid sauce.

I served it with plain white rice in which I put a cinnamon stick.

And don't forget a good wine. I recommend a white sauvignon :)

Well, this beautiful beginning of autumn caught me with some summer wines, but which I would drink all year round. And from the first tastings I went to, one was made by Vinuri de Măcin, on the terrace of La Pod by Gogu Constantinescu (well, there were also big tomatoes here, to remember when we come frozen later). This is where I fell in love with Renatus 2018. Let's face it, I knew him from other years, it was not in vain that he was always awarded at outdoor competitions, but this edition seemed great to me.

It's a debut of this wine that seduces you just like when you approach someone elegant who smells enveloping that you don't even realize when coup de foudre happened so fast.

Blend of Sauvignon Blanc, Chardonnay, Incense, Muscat, semi-dry, slightly barricaded & # 8211 excellent nose & # 8211 basil, jasmine, shock, as well as lime, melon. In taste, fruity aromas, summer fruit & # 8211 apricot, melon, some tropical yellow fruit & # 8211 mango, a fine drop of vanilla, pastry, honey. A complexity of flavors! A beautiful body, good minerality and a very pleasant taste.

I see it as excellent for assorted platters of elegant & # 8211 soft, matured cheeses and quiches with cheeses but also with chicken, elegant dishes with chicken, grilled white fish, grilled seafood, ceviche.

The tasting had 10 wines from Măcin and I was also very impressed by Feteasca Neagră, with that rare boiled corn flavor, typically Dobrogean, some almonds, a little spice, a little chocolate Mmm, in winter it would go very, very well with a tender beef medium rare if we want something finer, but also with pastrami if we want something more filling.

Pomegranate is one of the richest fruits in vitamins, fiber and antioxidants and is also among the most famous exotic fruits.

The next day is better than the day you did it, because the ingredients penetrate very well.
It can also be made with marinated anchovies, without bones.
