RECIPE PREPARATION Smart Cake:

Put on a low heat a pan with milk, butter and sugar. When the butter has melted, take it off the heat and leave it to cool. Separate the egg whites from the yolks, whisk the egg whites, mix the yolks with the vanilla sugar. Over the yolks add the milk composition with butter and sugar (be careful, to be cooled), mix lightly with a whisk, add the beaten egg whites little by little and gradually the 9 tablespoons of flour.
We put the composition in a medium-sized tray, which we grease with a little butter. Bake for 1 hour on low heat.
We cut it cold, optionally powder it with sugar.

The three-layer cake, which is popularly called "smart", completely justifies its name. It is only necessary to mix the dough correctly and during baking, it will form into a layer of soufflé, cream and top. METHOD OF PREPARATION

1. Separate the egg whites from the yolks. Beat the egg yolks with the vanilla sugar in a bowl until you get a foam. Then add 125 g of butter (at room temperature). Beat the ingredients in the bowl and gradually add the sifted flour. Add the milk to the dough and mix the ingredients.

2. Beat the egg whites separately until stiff. Add the beaten egg whites to the dough bowl. Homogenize the composition lightly with a spatula, moving it from the bottom up.

3. Grease the baking tray with the remaining butter and pour the dough into it.

4. Place the tray in the preheated oven at 180 ° C for about 45-50 minutes. Baking time depends on each oven.

5. Remove the dessert from the oven and allow it to cool slightly. Place the cake on a plate and decorate to taste & # 8211 with powdered sugar, coconut flakes or melted chocolate. Serve the appetizing dessert with a cup of aromatic tea or coffee, with great pleasure.


First you need to be careful to heat the oven to 180 degrees Celsius. Then the eggs are separated, and the yolks are taken together with the powdered sugar and mixed until they become a whitish cream. Gradually add the butter, and then follow the sifted flour. Finally, the milk is added in the same way. All this time the combination mixes at low speed. After this stage we move on to the egg whites, which will be beaten with salt powder and vanilla essences. You can also add rum essence to taste.

The beaten egg whites are put in the yolks with a spoon little by little. This operation will be done with a wooden or silicone spoon. Then we put the baking paper in a tray. The tray can also be greased with butter and lined with flour. The composition is poured into the pan and placed in the oven for one hour. It is preferable not to open the oven during baking.

First the oven is left for 10 minutes at 240 degrees Celsius, then at 180 degrees. Gradually reduce the temperature to 100 degrees. Leave the cake to cool in the oven and remove. Then put it in the cold until the next day and then put powdered sugar on it.


Romanian recipes: Smart cake

This cake is still heard among housewives. It keeps the taste of the old Romanian recipes, but simplifies the work in the kitchen. Once the tray is placed in the oven, it does not open for an hour and a half. After an hour and a half, turn off the oven, pull out the tray, powder the cake and put it back in the oven.

Allow to cool in the oven. Remove, cut and place on a plate.

Method of preparation

Melt the butter or margarine, in a saucepan or in a bowl, in the microwave (1 minute), let it cool a little (not too much so that it does not stick).
Beat the egg whites, the foam, with a pinch of salt.
Separately mix the yolks with the caster sugar, vanilla sugar and 2 tablespoons of water, mix well until it doubles in volume.

Add melted butter and 1 liter of warm milk to the yolk cream, to which we added the vanilla essence.
After mixing well, add flour in the rain until incorporated into the dough.
With a wooden spatula or spoon, with light movements from bottom to top, add the egg whites (do not mix too much).

The resulting composition is liquid, DO NOT BE AFRAID, this is exactly how it should look.
We take a tray, cover it with baking paper, turn the composition over and then put it in the oven, preheated, for 30-40 minutes on medium to low heat, until lightly browned on top. Don't be afraid if, when you take it out, the cake shakes a little, left to cool, it separates and thickens exactly as it should.
Be careful not to open the oven for the first 20 minutes. After you take it out of the oven, it will settle. After cooling, remove from the pan (you can turn it over for a more pleasant appearance). Cut into suitable pieces, powder with powdered sugar or not and serve

Smart Cake 2.0

Why & # 8220Cake smart 2.0 & # 8221? Because the recipe below is an improved version of an older recipe. What did I add? One of the essential ingredients: Rama Maestro margarine.

So maybe we shouldn't call it the "smart" cake, but the "smart" one! Why is our cake so smart? Because we put in the tray a very liquid composition and when we take it out of the oven, we have a cake in all respects, with top, cream and icing.

Ingredient:
& # 8211 a Cube Master Branch (250g)
& # 8211 9 oua
& # 8211 250g sugar
& # 8211 9 tablespoons flour (approx. 135g)
& # 8211 1 tablespoon vanilla sugar
& # 8211 1 liter of milk

Step 1. Preheat the oven to 140-150 degrees, respectively stage 1 of the oven and line a tray (28 x 18 x 5 cm) with baking paper. Margarina Rama is cut into cubes.

Step 2. Place cubes of margarine in a bain marie. For the bain marie, put a pot of boiling water and on top of it another pot in which we put Rama margarine and 4 tablespoons of milk.

Step 3. Add the caster sugar over the frame and melt them together.

Step 4. Separate the eggs. We whisk the egg whites.

Step 5. Mix the yolks with the vanilla sugar.

Step 6. Then add Rama margarine and sugar, melted and cooled. Mix well.

Step 7. Then incorporate, in turn, mixing well after each: cold milk & # 8230

Step 8. & # 8230buses beaten foam & # 8230

Step 9. & # 8230and the 9 tablespoons of flour & # 8230

Step 10. Put the composition in a tray greased and well lined with flour and put it in the oven for about 60-75 minutes, until it passes the toothpick test: a toothpick inserted in various parts of the cake comes out without a trace of composition.

Do not open the oven door for one hour, so that the cake grows evenly. Let the cake cool in the pan for a few hours or overnight and only then dust it with powdered sugar, portion it and serve it.


Smart cake

In a large bowl, mix the powdered sugar with the yolks until they become
light in color and creamy.

Add the melted butter and mix.

Add the milk a little and continue to mix until smooth. Then add the vanilla essence.

Then incorporate the flour by mixing with a whisk. Set it aside.

In another bowl, mix the egg whites with a pinch of salt.
When the composition has hardened a little, add the vanilla sugar and vanilla essence.

Continue mixing at high speed until the foam becomes hard and glassy.

Incorporate the foam little by little into the first composition until smooth.

Grease a 30 x 20 x 6 cm tray with butter then line with flour.

Pour the composition into the lined tray and put in the oven for one hour at 170 degrees.

Allow to cool and then refrigerate for at least 4-5 hours, preferably overnight.
Cut into suitable slices and serve in moderation.

Decorate with caramel syrup for extra flavor.

200g butter

1 l milk
1 teaspoon vanilla extract

Method of preparation
Separate eggs.
Foam the yolks with the sugar, add the melted butter (cold), the vanilla extract and then the flour, mixing well.
Pour the cold milk little by little until we get a homogeneous dough without lumps.
At the end, add the beaten egg whites with a pinch of salt and incorporate them with light movements.
The composition will be quite liquid but that's the way it should be !!
Grease a tray (27/40 cm) with butter and lined with flour, pour the composition into it and put the tray in the well preheated oven, placed on the highest step over low heat for an hour.
It is preferable not to open the oven door during baking.
After baking, turn off the oven and leave to cool in the oven.
Portion and powder with vanilla powdered sugar !!
